There are many dishes from all over the world that families cook during the holiday season. Students come from a diverse range of backgrounds, each with their own traditions. A favorite traditional dish for sophomore Jonah Margosis’s Hanukkah celebration is Latkes.
Ingredients:
- 5 peeled potatoes
- One onion
- 3 eggs
- 1 tsp. salt
- ⅓ cup flour
- ¼ tsp. pepper
- ¾ cup of oil
Grate potatoes, then strain the onions and potatoes removing all extra water. Add the eggs and flour and mix all that together. Heat a half cup of oil in a skillet and place a tablespoon of batter into it. Cook for 5 minutes until golden brown. Repeat until all batter is used.
Sophomore Will Porter and his family cook cinnamon rolls on Christmas day.
Ingredients:
- ¼ cup water at room temperature
- 1 cup warm milk
- ¼ cup melted butter
- ½ package instant vanilla pudding mix
- 1 egg
- 1 tablespoon white sugar
- 4 cups bread flour
- ½ teaspoon salt
- 1 package dry yeast (¼ ounce)
- 1 cup brown sugar
- ½ cup butter
- 4 teaspoons ground cinnamon
- ¾ cup chopped pecans (optional)
- 1 (4 ounce) package cream cheese, softened
- ¼ cup butter, softened
- 1 cup confectioners’ sugar
- ½ teaspoon vanilla extract
- 1 ½ teaspoons milk
Combine water, butter, vanilla pudding, milk, sugar, salt, bread flour and yeast in the pan of your bread machine.
When the dough is finished cooking, roll it on a lightly floured surface and form it into a 17×10 inch rectangle. Spread the dough with ½ cup softened butter. Stir together cinnamon and sugar, and then sprinkle on top of dough.
Preheat your oven to 350 degrees. Butter a 9×13 inch baking pan. Roll up the dough, and beginning with the long side slice it into 16 slices. Bake rolls in oven for 15 to 20 minutes.
Stir together the cream cheese, butter, milk, confectioners’ sugar and vanilla extract. Spread this frosting over the rolls after you have removed them from the oven and let them cool.
